Bananas are always in my fruit bowl. I use them in everything, including porridge, cupcakes, and even ice cream. However, we accidentally overdid it this week, so a very simple solution was to make banana bread!

The recipe requires very little effort, everything just gets thrown into a bowl and mixed together. The results were delicious too!

Next time I’m adding in walnuts – they would have added so much to this recipe, but it tastes pretty good even without them if you’ve none to hand.


2 tablespoons plain flour (or soya flour if you have it)
1/4 pt (140ml) water
55g vegetable margarine
85g sugar
3 bananas, chopped
55g walnuts (optional)
55g wholewheat flour
1/2 tablespoon salt
3 tablespoons baking powder

1/4 tablespoon baking soda


1. Mix a little bit of water with the plain flour until it forms a paste.

2. Mix in the margarine, sugar, bananas and chopped walnuts.

3. Stir in the wholewheat flour, salt, baking powder and bread soda.

4. Place in a bread tin and cook at 180 degrees for about 35 minutes. Make sure to keep checking it by skewering with a knife. When the knife comes out of the bread clean, it will be fully cooked!

And voila! The recipe is really that simple. The loaf is absolutely delicious, goes well with peanut butter (yes, I’ve tried) and is very handy to keep around as a snack.
